HOW TO MAKE HOTPLATE NACHOS
Hotplate Nachos are a classic and easy to make meal on the road. They taste great and fill a number of empty bellies, fast. This recipe will serve 4 - 6 people but you can easily add more beans or veg if you have more in your crew.
What you'll need:
- 1 x brown onion diced
- 3 x cloves of garlic
- 1 T tomato paste
- 1 tsp of Cumin, Paprika + Cinnamon
- 1 x beetroot or Kumara (or both) grated
- 2 x carrots grated
- 1 x can of black beans or chilli beans
- 1 x can of diced tomatoes
- 1ish can of water
- 2 x bags of corn chips, always jalapeño flavour.
What to do:
Get your hotplate up to medium heat, add oil and onions.
Once onions have softened, add garlic and spices - cook for 3min.
Add tomato paste.
Grate all veggies and add em, cook until they soften.
Add beans, tomatoes and water, Simmer until desired consistency then turn off flame.
Move all to one side, dump 1 packet of corn chips onto 1/2 of Hotplate then move all the nacho mix ontop. Dump other 1/2 of corn chips onto this side and spread nacho mix evenly over all of the chips.
Best served with guac, salsa, coriander and condiments of your choice, enjoy!
